Rabbit recipe with potatoes

Here is a recipe for cooking rabbit with potatoes in the oven:

Ingredients:

1 rabbit (approximately 1.5 - 2 kg), cut into portions
1 kg of potatoes, peeled and cut into large pieces
1 onion, sliced into rings
3-4 garlic cloves, minced
2 carrots, cut into circles
2 tablespoons vegetable oil
1 cup chicken broth (or water)
1/2 cup white wine (optional)
2 sprigs rosemary (or other herbs to taste)
Salt and pepper to taste


Instructions:

Preheat the oven to 180 degrees Celsius.

In a large frying pan, heat the vegetable oil over medium heat. Fry portions of rabbit on both sides until golden brown.

Transfer the fried rabbit pieces to a large baking dish or saucepan.

In the same pan, fry the onion, garlic and carrots for 3-5 minutes until soft.

Pour the white wine (if using) into the pan, let it boil and, stirring, collect all the flavors from the bottom of the pan.

Transfer the vegetables together with the wine sauce to the rabbit mold.

Spread the sliced potatoes around the rabbit and vegetables.

Put rosemary sprigs in the mold, pour chicken broth (or water), salt and pepper to taste.

Cover the mold or pan with foil and put it in a preheated oven.

Bake for about 1.5 - 2 hours, or until the rabbit and potatoes are soft.

Before serving, remove the foil and let the top of the rabbit and potatoes brown for the last 15-20 minutes of cooking.

Serve the rabbit with hot potatoes, sprinkled with fresh herbs.

Useful properties:
Potatoes - contains starch.
Rabbit - will help strengthen joints.
